Pavlova recipe

Taste a real Pavlova with a crunchy exterior and a soft heart.

(8-10 people)

3 egg medium size egg whites
½ tsp. vanilla essence
3 3/4 cups sugar
1 tsp. cornstarch
1 tsp. vinegar
4 tbsp. boiling water

Round baking pan, 22 cm in diameter
Baking paper
1 tbsp. melted butter
2-3 tsp. cornstarch

4 cups whipping cream
3-5 kiwi fruits
1 cup blueberries
If possible. fresh mint for garnish

1. Whisk the egg whites, essence, sugar, cornstarch, vinegar and boiling water to make meringues using a kitchen machine or a hand mixer. It should take approx. 5-10 min.

2. Grease a round pan (22 cm in diameter) with a little butter. Cut wax paper to fit - first a round bottom, then the paper to the mold sides. Fit the baking paper in the shape, and brush it with melted butter. Sieve cornstarch over the butter. Put meringue into the mold. Bake Pavlova in the oven at 180 degrees for 10 minutes. in the middle of the oven. Reduce to 150 degrees and bake the cake for 50 minutes. Turn the oven off and leave the Pavlova to cool completely. It should have a crispy shell and a marshmallow-like interior.

3. Whip the cream and pour it over the Pavlova. Peel kiwis and cut them into cubes. Spread the cubes and blueberries over the whipped cream  and garnish if possible. with fresh mint.
